Preheat oven to 350 F and spray a foil-lined baking sheet with nonstick cooking spray. In a medium bowl, whisk together butter, 2 T honey, orange extract, salt, pepper, and hot sauce (if using). Add chicken pieces, stir to coat, and place in a single layer on baking sheet. Bake 15-20 minutes or until no longer pink inside.
In the meantime, combine all other ingredients in a large bowl. Allow chicken to cool slightly, then combine and toss.
