From finecooking.com, modified by me. This is a simple and delicious way to get more spinach into your diet. Its amazingly simple and very tasty!
First, make the dressing: Combine the lime juice, vinegar, fish sauce, sugar, and toasted sesame oil into a bowl and whisk to combine.
Heat a skillet over high heat until hot. Add the pork and the salt and brown, breaking up the pork as you go.
Add 2 Tablespoons of the dressing into the pork. Then, working in three batches, add the spinach. Toss often and when the last batch is wilted, remove from the heat. do not overcook. Just wilt the spinach!
Serve over rice or asian rice noodles (ala pad thai) and let people add as much or as little of the dressing to their dish as desired! I usually serve this with Banh Pho Thuong Hang extra large rice stick noodles!
