1. Cut Salmon into 1 inch chunks. Be sure skinned and deboned. Pulse in a food processor until course ground. Transfer to bowl and stir in cilantro and next 6 ingredients. Store in 1/2 cup bread crumbs. Stir in eggs, mixing well. If needed, Add more cracker crumbs until mixture holds together
2. Divide salmon mixture into 4 portions. Shaping each into 1 inch thick patty. Cover and refrigerate 20 minutes to 8 hours.
3. Preheat grill to medium-high.
4. Generously oil grill grates. Brush both sides of patties with oil. Grill over direct heat 3-5 minutes each side.
