Preheat the broiler. Place the wings on a broiler pan and broil 4-5” from the heat for 10 minutes. Transfer to CROCKPOT. Stir in the brown sugar, soy sauce, ketchup, sherry, ginger and garlic. Cover and cook on LOW for 5-6 hours or on HIGH for 2-3 hours, stirring halfway. Remove the wings with a slotted spoon to a dish. Remove ¼ cup of the liquid and discard the rest. Combine with the hoisin and lime in a bowl. Drizzle over the wings and sprinkle with sesame seeds and scallions.
