Juicy beef meatballs sanwiched in a bun with carrot, cucumber, lettuce and an addictive ginger sauce.
Sauce: combine all ingredients in a small bowl. Cover and refrigerate until needed. (Can be kept for a couple of days, but be cautious with the Mayo)
Meatballs: Preheat oven to 375 degrees F. Line a baking sheet with parchment paper. Combine the meat ingredients in a bowl.
Moisten your hands with cold water. Roll the meat mixture into 2-inch balls andset on the baking sheet.
Roast the meatballs 25 minutes, or until cooked through (170 degrees F.). Drain any excess fat from the meatballs.
Divide the meatballs among the buns.
Top with the ginger sauce, lettuce, carrot and cucumber. If youlike things spicy, drizzle the meatballs with some hot chili sauce.
