1. Heat 1T oil - add turkey, all but 2T of scallions, garlic and ginger. Cook until turkey is cooked and then take out of pan
2. Optional but recommended - par boil the noodles - about halfway in salted water. You'll have more soup!
3. Add broth, water, book choy, noodles, soy sauce, vinegar and 1 T oil. Bring to a boil and cook until noodles are tender. Add turkey back in.
4. Serve in individual bowls garnished with scallions and cucumber
