Cut Daikon into small rectangles. If you have great knife skills, then in perfect squares.
Sauté in ghee (clarified butter) on medium to medium heat.
Caramelize, which means cook until turning brown which forms the sugar. If the Daikon is not soft, then add some water and cover to steam until soft.
While the Daikon is cooking, break off the bottoms of the Asparagus. You can also cut them.
However, by breaking in a special way the harder parts of the butts of the Asparagus can be separated from the tender parts we want to eat.
From near the heads grasp the Asparagus with one hand and push into the palm of the other. The Asparagus will usually break at the tender point.
You can test by cutting a small circle off the broken or cut end and tasting. If it is fibrous, it is not cut close enough to the to of the Asparagus.
Put the water and Asparagus in the same pan as the as the Daikon. Use your judgment about whether it might benefit from more Ghee (Clarified Butter). Steam for 4 minutes and then check. Keep checking every 2 minutes until the Asparagus is the way you like it.
Serve immediately.
If you need to keep in pan, then stop cooking when the Asparagus is a bit crunchier than you like it to be.
You will get a sense of the timing when you have cooked a few times.
