Add 1.5 c of broth; cook 6-7 min, stir occasionally, until liquid is absorbed; (it should simmer but not boil). Add 2 c of broth and asparagus; cook and stir 6-7 min, until liquid absorbs. Add remaining broth and peas or edamame, cook until liquid is absorbed and rice is creamy.
Remove from heat, stir in remaining butter and cheese until melted.
can add spinach, at the end. Can add 2 cups chopped chicken meat also.
This takes a while, but it is worth is. It rounds out to about 316 cals per 5 servings
