The best potato salad ever! Aunt Betts cuts the potatoes into small pieces, which makes it even better. It takes a little extra time to make, but it's worth it!
Mix cornstarch, vinegar, and sugar together until smooth. Add remaining dressing ingredients (except mayonaise) and cook at medium heat, stirring constantly until thick (consistency of pudding).
Remove from head and add 2 cups of mayonnaise.
Fold in hard boiled eggs, onions, and cooked potatoes.
Check potatoes to be sure they are fork tender. Fold into dressing carefully so the potatoes don't break apart too much.
