A nice loaf of delicious bread, almost Candy. Lovingly created by my Aunt for my wife who cannot have vanilla.
Put the Shortening, Bananas and Sugar in the mixer. In a bowl, beat and add eggs, cocnut extract and lemon juice. Sift together the flour, salt and baking powder into another bowl. Start the mixer, cream the bananas, add the wet ingredients, add to this the dry ingredients to the mixer. Blend just enough to combine, but don't over blend or bread will be tough. Hand stir in nuts and cranberries. Put into greased loaf pan. Bake at 300 degrees for about 1 hour.
Topping
Using a pastry blender, put 3 tablespoons of milk into 1 cup of confectionary sugar.
