The origional NBC soap opera "Passions" Tomato Soup Cake recipe. Aunt Grace was always baking up her speciality,tomato soup cake, for all her friends in Harmony! While some can't seem to get enough of it, there are those who hope to never lay eyes on it again(Can we say Tabitha). Now everyone can try out Grace's recipe and decide for yourself.
For the cake:
Preheat the oven to 350 degrees and grease either one 9x12 or two or three 8-inch round pans. First measure and mix all dry ingredients into a large bowl. Next add Cambells Tomato Soup with the butter and beat at low speed for 2-3 minutes. Then add the eggs and milk and beat til well blended, scraping sides of bowl as needed. Pour into pan(s) and bake fro 35-40 minutes. Let stand 10 minutes then turn out pans on rack to cool(if 9x12 used keep it in its pan). Finally use Grace's secret frosting recipe and garnish with "on the vine" cherry tomatos.
For the frosting:
Blend cream cheese with milk, cinnamon, vanilla and almond extract and then the powdered confectioners sugar. Beat until smooth and add more milk to desired texture.
Final Display:
On first glance the "on the vine tomatos" might throw your guests off a little. However, once they taste it the cake will be gone quickily. For a heavier cake only use 2 eggs, but i find 3 is perfect. Best tasting room temperature but if chilled its ok. Unlike other recipes with raisins and nuts this is from the classic NBC soap opers "Passions"....Enjoy with friends and a pitcher of Martimmys.
