In large bowl mix eggs, oil, flour, salt and pepper- set aside
Coarsely grate potatoes and onion by hand. Let stand 3-5 mins.
Squeeze out excess fluid with wire colander.
All potatoes to egg/flour mixture mix until smooth.
Take hot pan out of oven and pour mixture so outside sizzles.
Bake uncovered for 1 hour until golden brown.
Check if knife come out clean in center
