Delicious.....a true indicator that the holidays are upon us!
Grease a 9 x 13" pan. Line pan with wax paper and grease the paper. Preheat oven to 375 degrees. In an electric mixer, beat wet ingredients together,. Slowly blend in spices, flour and nuts. Pour into pan and bake for 15 minutes. Let cake cool in pan for 5 minutes. Turn it out onto a wire rack. Sprinkle powdered sugar onto a tea towel. Carefully transfer cake to the tea towel. Roll the warm cake in the tea towel and refrigerate for 45 minutes.
Meanwhile, mix the cream cheese, margarine, vanilla and powdered sugar together with an electric mixer. This is the filling. If you prefer, add a teaspoon of lemon juice to the mixture.
Carefully unroll the cooled cake. Spread the filling mixture on top. Roll the cake up and refrigerate until ready to slice and eat,. Sprinkle the top with powdered sugar.
