I'm going to try this gluten free
Preheat oven to 350?. Beat together first 3 ingredients. Add sugars and mix well. Add flour, salt, cloves, nutmeg, and baking soda. Mix together. Add the walnuts and raisins. Cube apples (don't peel) and add to mixture. Bake in pan for 35 minutes. Cool.
Icing: Mix together the melted butter, vanilla, salt & coffee. Add confectioners' sugar and milk as needed together to desired spreading consistency. Spread onto cooled cake.
You may also use cream cheese icing.
