Apple and spices give this tasty sausage-rice casserole the flavor of autumn.
In a large skillet, cook the sausage, apple, onion and celery over medium heat until meat is slightly brown and apple and onions are soft but not mush; drain.
In the skillet, stir rice, raisins and spices into the sausage mixture.
Transfer to a greased 2-qt. baking dish. Pour broth or cider over top.
Cover and bake at 350° for 25-30 minutes or until heated through.
Remove cover, top with cheese and return to oven for about 5 minutes to melt cheese.
Yield: 4-6 servings.
Use a good, crisp, semi-tart apple. I use Gala. just make sure it's not a soft apple, like a Macintosh, or it will turn to mush.
I prefer this dish with pork sausage, but you can also use chicken or turkey sausage.
