Saute onions and garlic in oil until tender, 4-5 minutes. In the meantime, wrap sweet potatoes in paper towels and microwave on high for 1-2 minutes, just long enough to soften slightly. Unwrap and let cool enough to handle, then peel and cut into 1-inch cubes Stir potatoes and beans into onion-garlic mixture in pan. Add Italian seasoning and mix well. Cover and reduce heat, adding water or broth if necessary, and simmer slowly for about 10 minutes until potatoes are cooked through.
