Preheat oven to 450 degrees. On a baking sheet, toss corn with 1 tablespoon oil. Roast 8-10 minutes, while tossing every 2 minutes. Remove from oven and let cool
Combine all other ingredients, then add corn and remaining 2 T. Oil. Cover and refrigerate for 4-6 hours. Serve with bite size Tosititos
A great addition to a Mexican fare....I would at least double it...it goes quickly !!!
I have left out cumin and used regular onion instead of red or just have no onion. Still taste great
