You will need 2 small slices of baguette or one large slice per person
1. Preheat the oven to 180, slice the bread and brush with a little olive oil and put in the oven for 5 minutes until bread is golden brown. While the bread is still hot rub a peeled garlic clove over the toast.
2. In a small-medium bowl, gently combine 1 teaspoon of olive oil, the minced garlic, tomato, balsamic vinager , salt and basil.Season to taste with more salt and/or vinegar if desired.
3. Top the toast with a spoonful of the tomato mix and then scatter some of the diced avocado on top of that. Serve on a bed of rocket and drizzle with balsamic glaze.
Tomato topping will keep refrigerated in an airtight container for up to 24 hours.
