Crunchy and creamy avocado salad
Chop all veggies to be chopped, saving romaine lettuce for last. Chop lettuce. Add the smashed half of the avocado (and any salt/pepper you might want) and gently mix till avocado is evenly distributed throughout lettuce leaves. Add the chopped avocado and gently mix in. For flavor, color, and crunch, arrange remainder of ingredients on top and serve immediately. No dressing needed, the avocado and salt ARE the dressing! You'll want to serve this right away as it wilts quickly and doesn't save well, even in the fridge.
