1. Puree avocado and onion with lemon juice in blender
2. Gently heat avocado mixture and chicken stock, preferably in a double saucepan
3. Simmer gently for 10 minutes, then add cream, salt, pepper stirring continually
4. Cook for a further 10 minutes but do not boil
5. Strain and chill well before serving
6. Serve chilled
