Salad with avocados, radishes, and spinach
Wash and dry the spinach. Wash the radishes and cut into thin slices. Wash and slice the zucchini into 1/8 inch slices. Cut avocado in half and remove the pits. Cut in to thin slices. Saute zucchini in oil over low heat for a few minutes. Stir occasionally. Add salt and pepper. Mix the spinach and radishes and make a layer on each plate. Layer some sauteed zucchini over the spinach and radishes. Lay the avocado on top in a fan shape. Drizzle lemon juice over the top.
