A super easy muffin mix to which you can add any extra ingredients for personalisation!
Set oven to 200 C.
Mix the flour and sugar together and add salt. Separately, in a cup, mix together the oil, milk and egg. Then combine the two mixtures. The mixture should be a thick but pourable consistency. If the mixture is too thick add more milk until right.
At this point you can add any extra ingredient you like to make whatever flavor muffins you want. I usually add either half a pack of blueberries or chocolate chips to mine. Yum!
For a topping, mix 1/3 cup flour with 1/2 cup sugar and some butter to make a crumbly biscuit texture and sprinkle on top of the mix before putting them in the oven.
Grease a muffin tray with butter, pour in the mixture and bang them in the oven for 20-25 mins!
Make sure to butter the tray enough so the muffins slip right out when done.
