Suggest a better descriptionEasiest and best: broil eggplants POKED a few times (200 gm, preferable baby eggplants) on all sides for about 20-30 minutes (longer for non-baby). Take out into the fodo processor unpeeled (tried it with baby and was perfect) with 1 solo garlic, 1/2 lemon juiced, salt, black pepper, 2 eating tbsp yogurt, 1eating tbsp tahini, a splash olive oil, Aleppo pepper and run till compeltely pureed and emulsified. Correct seasoning
UPDATE: Made the one in Feast and loved it as much if not a bit more:
-2 graffiti eggplants for 2 portions with the kofta
-preheat broiler for 30 minutes before placing the eggplants for 25 minutes on foil-lined smaller baking sheet on each of the two sides
- against her instructions blended the peeled eggplant (no need for the straining step, simply halve it when it comes out of the oven and let it cool enough to handle) with 4 (!) garlic loves and 40 gm tahini

Made Bittman's recipe in BRTW:
-Eggplant took 30 minutes, not less, on each of the 4 sides (on the middle rack on hottest setting with fan)
-Needed double the amount of lemon juice as well as some olive oil to make it creamier
