This recipe helps use up that last box of infant cereal us parents all have in our pantry! But if you don't have any you can just use all seasoned bread crumbs instead. These are just a "pint size" version of the original and they're just too cute & yummy for any kid, or grown-up, to pass up!! (Check out my review for other flavor combos too!)
1) Preheat oven to 375(F) degrees. In a large mixing bowl, mix the beef, garlic, crushed onions, cereal, and seasoned salt/pepper blend together.
2) Press mixture evenly into a muffin tin that makes a dozen. Place a plastic bag over your hand and using your thumb, press down the center of each mini meatloaf to form a little well.
3) Place 1 or 2 teaspoonfuls of the BBQ sauce in the little well of each mini meatloaf.
4) Bake for 20 minutes. Top with cheese and bake 5 minutes more to melt. Enjoy!!
These freeze really well, just place the muffin tin in the freezer after step 2 and wait about an hour or 2 for the outside to freeze and harden. Then gently pop them out of the tin and place in a freezer container. When your in need of a speedy meal just take them out of the freezer, pop them into the muffin tins, fill with the sauce and cheese, place in the oven and then turn it on to preheat. Start cooking time after the oven reaches 375(F) degrees and they should come out perfect!
