Heat half of the oil in a pan until hot. Add ginger and garlic and cook until they are beginning to brown. Whisk in the mirin, miso, lime juice, vinegar, and sriracha cook until slightly thickened. Add the sesame oil. Pour into a container and keep warm. (you will pour this over the bok choy when done, so don't let it go cold)
Now, clean the pan and add the rest of the oil. Once hot, add the bok choy, toss and then cover and cook, turning them over occasionally until they are tender but still crisp and have some color. (usually 5-6 minutes, depending on how hot your oil was).
Put the finished bok choy on a plate and drizzle on the warm dressing.
