soak cashews in hot water for 10 minutes
then pour into a blender and blend until very smooth.
add remaining ingredients and pulse until smooth.
chill in tightly covered jar at least 20 minutes for flavors to blend. use within a few days.
to make other flavors-
chipotle: add 1 tbs chipotle in adobo sauce
curry lime: add 2 tsp curry powder and replace lemon with lime juice
creamy siracha: add 3 tbs siracha
maple bacon: add 1 tbs maple syrup and vegan bacon bits
pesto ranch: add 3 tbs pesto
mango curry: add 1/2 cup mango chutney
