Make a thumb-sized indentation in the center of each patty and fill with 1 1/2 Tbsp. blue cheese. Form meat up around cheese to enclose and form a burger.
Cook over a medium hot grill until coked to 160?F. Serve on toated buns with blue cheese dressing.
