Peel boiled eggs and slice in half length wise. Remove yolk and set aside in bowl. Place egg whites on a tray or platter.
Mash egg yolks with a fork until they form small crumbles. Add sour cream and vinegar, stir together.
Add cheddar cheese and bacon bits, stir mixture until completely mixed. Add salt and pepper to taste.
Place mixture inside of a large Ziploc bag, and snip off a corner. Use the bag to pipe the mixture into the egg white halves.
Garnish with chives or extra bacon bits if desired.
