1. Preheat oven to 180C
2. Pour the olive oil into a medium frying pan . Add the onion and cook over a low heat until transparent.
3. Add the pepper, mushrooms and bacon and continue cooking until the pepper is soft, stirring often.
4.Stir in the chorizo and tomatoes and bring to the boil. Remove from heat.
5. Meanwhile, bring a pan of salted water to the boil. Cook the pasta until it is almost tender, about 2 minutes before the recommended time on the packet. Drain and turn the pasta into a baking dish.
6. Mix in the meat and vegetable sauce. Stir in half the diced mozzarella. Top with the remaining mozzarella and the grated cheese. Bake until the top is bubbling, about 20 minutes.
