Baco, liver in tomato based casserole
Slice liver into long thick strips, coat with flour and fry in olive oil until golden brown. Place in casserole.
Add bacon and onions to fry pan, cook until brown. Stir in excess flour in which liver was coated.
Add tomatoes, marjoram, bay leaf and worcestershire sauce. Stir in stock. Season well and place in casserole.
Cover with tight fitting lid and cook 150 deg C for about 1 hour 30 mins
