In a large skillet, melt butter over medium-low heat. Add the bread cubes and gently toss to coat in butter.
Cook till crispy (about 5-7 minutes). Remove from heat and sprinkle with dill, salt and pepper to taste.
To Prepare Soup:
Fry bacon in a pot till crispy, and remove from heat and reserve for later, but keep fat in pan.
Add butter to bacon fat and melt. Add onion and cook till soft (about 8 minutes).
Meanwhile, coarsely chop asparagus and add to the pot, along with the stock, salt and pepper. Bring to a boil and then reduce and cook for 20 minutes.
Remove pot from heat and add greek yoghurt and blend till smooth.
Ladle into bowls and add reserved bacon and croutons.
