1. Cook 5 strips of bacon. Remove and save 1-2 TBS bacon fat
2. Cook corn kernels in bacon fat about 5 minutes, until slightly brown
3. Cool down. Add crumbled cheese, cilantro and lime. Bring to room temp and crumble in bacon.
4. Cut avocado in 1/2 inch pieces. Toss in skillet. Serve or refrigerate. If in refrigerator, bring to room temperature.
