At Flite where Joel works, they had their first annual chili cook-off. Competition was fierce with ten entries, but Joel won with his chili that includes two things he loves: bacon and whiskey.

This recipe is frankensteined from a few recipes found on the web: a good basic no-beans chili recipe, one that incorporates whiskey, and a crowd-pleaser that incorporates bacon.
This recipe makes about 3.5 quarts. It was made on a Sunday afternoon and about half was served for dinner that night. The other half was refrigerated overnight and then reheated in a crock pot the next day for the cook-off.
