Cover eggs with cold water by 1". Bring to a rapid boil over high heat. Remove from heat, add a lid and let stand 10 minutes. Transfer eggs to an ice bath with a slotted spoon and let stand 5 minutes. Peel eggs and slice in half. Remove yolks.
Microwave bacon according to directions and chop up in the food processor. Remove and set aside.
Process yolks, mayonnaise, mustard and lemon juice in a food processor 30 seconds or until smooth, stopping to scrape down sides.
Stir bacon, chives, pepper and salt (might not need it, taste first) into yolk mixture.
Spoon mixture into a plastic freezer bag. Snip one corner to make a small hole. Pipe yolk mix into the egg haves. Garnish with chives or bacon if desired.
You can easily do 1 1/2 times the recipe or double it.
