Place prepared pie crust in a prepared pie dish. Prick with fork and bake for 10 min. Remove from oven and cool
Melt butter in saucepan and add onion. Cook until softened and just starting to brown. Remove from heat and set aside.
In large bowl whisk together cream and eggs. Add the bacon, onions, cheese and salt and pepper. Pour into pie crust. Don't overfill.
Bake for 40 minutes - until edges are golden brown and center feels set.
Let sit for 5-10 min to set before serving.
