Cook grits with water and salt according to package directions. Add butter and cheese; cook over low heat until melted. Cool. Stir in 2 beaten eggs. Pour into a 2 quart casserole dish. Set Aside
Fry bacon until crisp. Crumble and sprinkle over grits, reserving 1/2 cup bacon crumbs. Beat 4 eggs and milk. Pour egg mixture over bacon and grits. Bake 350 for 50 minutes. Sprinkle top with remaining bacon crumbs.
