Suggest a better descriptionHeat oil in a pot. Add bacon, cook until browned and crisp. Add onion, continue cooking until softened. Stir in escarole, salt and pepper. Cook until escarole is wilted. *Bring a pot of salted water to a boil. Add gnocchi, cook as label directs. Reserve 1/2 cup cooking water, then drain gnocchi, add to pot with escarole mixture. Add cooking water, stir. Stir in tomatoes, Parmesan and parsley, season with salt and pepper. SERVE & ENJOY...
