Sauté mushrooms and onion in the butter until cool. Set aside and let cool.
Preheat oven to 350 degrees.
Prepare chicken by butterflying to create small pockets.
Mix cooled mushroom mixture with the cheese and parsley. Stuff the mixture into all the chicken evenly.
Sprinkle chicken with salt and pepper and wrap each breast with two pieces of bacon.
Place chicken in a baking dish and cook for 45-60 min. in the oven, until the juices run clear or they reach an internal temperature of 180 degrees.
I typically serve this with fettuccine alfredo on the side.
