Grilled bacon wrapped Wahoo steaks.
Wash Wahoo in cold water and pat dry.
Trim off skin and small amount of dark meat. Coat Wahoo on both sides with oil and wrap in bacon using toothpicks to secure.
Lightly coat Wahoo with Montreal Steak seasoning.
Grill on medium until fish is white and flaky, do not overcook. Wahoo steaks will vary in size so be sure to cook properly.
Tent with tinfoil for five minutes prior to serving.
Be sure to buy or catch fresh Wahoo if possible. I know Wahoo is a sport fish and not easy to buy however you may be able to apply this to any white, staked fish. I buy mine at my local fish market here in FL.
