Prepare beans in large pot - cleaning and soaking per instructions. Drain beans. Add new water, enough to cover beans.
Brown meat in skillet, drain excess fat. Slice and chop sausage into small pieces.
Add meat and sausage into beans, stirring to distribute evenly. Add can of beer and enough water to cover mix about an inch on top. Put pot on simmer, and stir occasionally.
Add garlic and bay leaves to mix. Begin adding seasoning to mix, tasting to ensure that seasoning is not overdone. Continue to stir occasionally.
Slice and chop onion - set aside to add to mix later, when the mix is almost ready to serve and enjoy.
This dish can be prepared faster than 3 hours, but the longer and slower it simmers the better the flavoring pervades all the ingrediants.
