Cook the macaroni in boiling salted water until al dente, add the onion and green pepper to the pot and cook for a minute or so until softened.
Drain and return to the pot. Add half the cheese and stir until melted.
Beat the eggs with dashes of hot sauce, salt, pepper and paprika.
Stir the eggs and the evaporated milk into mac and cheese.
Spoon into buttered baking dish and sprinkle with remaining grated cheese.
Bake at 350 degrees for 30 minutes. Remove and let stand 10 minutes. Cut into squares and serve.
