1.) Mix all 8 ingredients in a bowl
2.) Pour marinade over 1 lb. of firm white fish fillets
3.) Cover and refrigerate for at least 15 - 30 minutes.
1.) I prefer to use fresh Halibut, but have seen them made with Ahi, Pollack, or Tilapia.
2.) Do not marinade for more than 3 - 4 hours, because the acid in the lime juice will actually start to cook the fish (just like ceviche).
3.) If you prefer to have more kick, just add more ground cayenne pepper.
