Preheat the oven to 350*
Core and Quarter one apple. Spray with olive oil, and sprinkle with lemon juice, truvia, cinnamon and a pinch of salt.
Pour 2 Tablespoons water in bottom of the pan, and cover with lid.
Bake at 350* for 20 minutes.
I serve with warmed cottage cheese, and some of the drippings from the pan poured over the cottage cheese.
