Preheat oven to 400 degrees. In large bowl, lightly beat eggs. Add the flour, sugar, baking powder, cinnamon, and apple cider. Mix well . Shred apples and add to batter. Fill muffin pan with mixture. Bake until just under done, testing with toothpick or fork. Finish by broiling for a few minutes to brown tops. Serve warm. Approximately 5 minutes.
