A colorful and surprisingly hearty appetizer. Oven-baked asparagus is tender and flavorful. Bacon is laid across the asparagus so that as the bacon cooks, the bacon grease drips down to flavor the asparagus.
Preheat oven to 375F.
Rinse asparagus.
Cut or snap off woody ends; reserve for some other use such as soup.
Line a shallow edged baking sheet with parchment paper.
Scatter onions evenly across baking sheet and lay asparagus on top in a single layer.
Lay bacon across asparagus.
Bake for 30 minutes or until bacon is fully cooked and asparagus is tender.
If desired, finish by crisping bacon under broiler for 1-2 minutes.
A few strips of red pepper can be added for additional color; if so, put them near the center of the baking pan so they do not dry out.
