1. Preheat the oven to 200 degrees C. Line a roasting tray with parchment paper and spray with olive oil cooking spray.
2. In a small bowl, whisk together the flour, chilli powder and salt. Pour the milk into a small bowl.
3. One at a time, carefully dipp each avocado slice in the flour, then the milk, then the flour again. Place the coated pieces on the tray. Spray both sides of the avocado slices evenly with olive oil cooking spray.
4. Bake until golden brown and crispy on the outside, turning halfway through, for about 25 minutes total (do not let them burn).
5. While the fries bake, whisk together the mayonnaise, tomato puree, juice and smoked paprika. Serve the hot fires with the mayonnaise.
