On a tray, lay baking sheet.
Season filet with salt and herbs de Provence
Lay fillets onto the baking sheet
Sprinkle extra virgin olive oil and Pastis.
Cover with foil
Bake for 30mins
Halve all the tomatoes, season with salt, extra virgin olive oil and 2-3 cloves of minced garlic
After 30 minutes, remove fillets from oven, open foil, add in the seasoned tomatoes
Return tray to oven, increase temp to 200 for 5-7 minutes. Until tomatoes blister.
Remove from oven. Cover with foil, serve in 10 minutes.
