In a pan, heat oil. Add onions and bay leaf, cook until tender. Add cream, cook until reduced. Let cool slightly. Heat oven to 350. Spray a 9x13" baking dish with cooking spray. In a skillet, cook spinach until wilted. Squeeze spinach dry. Stir in spinach, beans, and cherries into cream mixture. *In a bowl, whisk eggs. Strain into cream mixture. Stir. Pour mixture into baking dish. Bake 35 min. Let cool 15 min. Cut into 8 pieces.
