Preheat oven to 200 C (400 F). Heat butter in a fry pan on medium heat and sauté onions, peppers and mushroom 4-5 minutes. Remove from heat and allow to cool slightly.
In a missing bowl, add ham, cream cheese, mustard, pepper, cheese and contents in pan. Mix well.
Line a baking sheet with parchment paper and place the puff pastry in the middle of the pan. Place the ham mix along the center of the pastry.
Cut pastry in 1 inch wide strips from the filling right to the edge of the pastry on both sides. Fold the strips of puff pastry over the filling on a diagonal from alternating sides to create a braid pattern.
Brush the pastry with egg yolk and bake for 20-25 minutes, or until the puff pastry is golden brown. Transfer braid to a cutting board and cut into 6-8 pieces with a serrated knife.
