Suggest a better descriptionPreheat oven to 425 degrees. Oil a 3 or 4 cup baking dish. In dry medium skillet sauté chorizo over medium-high heat until almost crisp. Remove chorizo to plate. Add onion & garlic to pan juices & cook until soft (about 5 minutes). Return chorizo to skillet with onions & garlic & stir to combine. Put 1/2 cheese in the baking dish & sprinkle with 1/2 of chorizo mixture. Repeat with remaining cheese & chorizo mixture. Bake until cheese is bubbling (about 20 minutes). Serve with flour tortillas for soft tacos.
